Chicken in orange sauce
We think of orange sauce as going with duck. Chicken is great in an orange sauce, too. This recipe doesn't take a lot of fancy ingredients. You should have everything on hand.
Make it either with a cut up fryer or the equivalent in chicken breast halves.
CHICKEN IN ORANGE SAUCE
1 chicken fryer, cut in serving pieces
1 teaspoon salt
1/4 cup butter or margarine
3 tablespoons plain flour
3 tablespoons sugar
1/4 teaspoon dry mustard
1/2 teaspoon cinnamon
1/8 teaspoon ground ginger
1 1/2 cups orange juice
Sprinkle chicken pieces with salt. In deep large skillet brown chicken in the butter. Remove chicken pieces. To drippings in skillet add flour and spices. Stir to a smooth paste. Gradually add orange juice. Cook over medium heat until mixture comes to a boil. Return chicken pieces to skillet. Cover and simmer over medium-low heat until chicken is tender, about 40 minutes. Remove chicken pieces to serving platter. Spoon sauce over chicken. Serve with hot rice. Serves 4
