Cheesy Turkey Cakes
We don't usually make fried turkey cakes. Why not? They are easy to do. You have the cooked turkey. This recipe called for instant potato flakes. If you have leftover mashed potatoes, use 2 cups of them instead. Just omit the water in the recipe.
CHEESE TURKEY CAKES
1/2 cup minced celery
2 tablespoons margarine
1 1/3 cup water
Packaged instant mashed potato flakes, 4 serving size
1 beaten egg
1/4 cup shredded sharp Cheddar cheese
1 teaspoon instant onion
1 teaspoon dried parsley flakes
Dash of pepper
1 cup finely chopped cooked turkey
1/3 cup fine dry breadcrumbs
Cheese Sauce
In medium skillet over medium heat cook celery in margarine until tender. Stir in water. Bring to a boil. Stir in instant mashed potato flakes, egg, cheese, onion, parsley and pepper. Mix in turkey. Remove from heat and stir until combined and thickened. Shape into 12 patties. Coat with crumbs. Cook over medium heat in melted butter in hot skillet about 2 minutes on each side. Serve patties with Cheese Sauce. Makes 4 servings
CHEESE SAUCE
Prepare a medium white sauce. Use 1 cup for this recipe. Save remainder for another use. Add 1/4 cup shredded sharp cheddar cheese. Or use it all and add 1/2 cup cheese. Cook over low heat, stirring constantly until cheese has melted.
