Cheese Spread

There are times you need a cheese spread. Rather than buy a jar, make your own. Then you will know wha's in there. If you are like me, you probably have all the ingredients on hand anyway. Try this one

Cheese Spread
8 ounces process American cheese, like Velveeta, diced
4 ounces cream cheese.
1/2 cup mayonnaise
3 tablespoon evaporated milk
2 tablespoons sweet pickle juice
1 tablespoon chopped pimiento
1/2 teaspoon sugar

Place Velveeta in top of double boiler. Bring water in bottom of double boiler to a boil. Reduce heat to low. Cook, stirring, until cheese melts. Stir in remaining ingredients, mixing well. Cool. Serve with crackers. Store in refrigerator. Makes about 2 cups.
