Carrots In Orange Sauce

Carrots are great dressed up with just a little butter, salt and pepper. They peak their orangy heads out of soups and stews, too. Carrots and orange are a great combination as well. Try it.

Carrots In Orange Sauce
5 or 6 carrots
1/2 cup orange juice
1/2 teaspoon salt
2 tablespoons sugar
1/2 cup cold water
1/2 cup boiling water
3 tablespoons butter

Wash, peel and slice carrots into 1/4 inch circles. Place in saucepan with orange juice, salt, sugar and cold water. Bring to a boil. Cover and simmer until carrots are tender. Watch carefully and shake pan occasionally to prevent sticking. When carrots are tender add the 1/2 cup boiling water. Stir in butter creamed with the flour. Simmer and stir for 1 to 2 minutes to thicken. Makes 4 servings.
