This is a fancy carrot salad. Of course i call anything fancy if it has marshmallows in it.

CARROT SALAD DELUXE
1 pound carrots, peeled, grated
1/2 cup mini marshmallows
1/2 cup flaked coconut
8 ounce can crushed pineapple, with juice
2 tablespoons honey
2 tablespoons sour cream
2 tablespoons lemon juice

In large bowl combine carrots, marshmallows, coconut and crushed pineapple with juice. Stir lightly to combine. Ass honey, sour cream and lemon juice. Again, stir lightly to combine. Chill overnight. Very pretty served on a lettuce leaf. Serves 6.
