Butterscotch pudding dessert

Everybody loves Banana Pudding. This recipe is a variation of that favorite. I made it when I was doing the Wednesday night suppers at church. It is a good potluck dish, doesn't cost much to make and goes together quickly. If you like a butterscotch flavor, this is for you.

BUTTERSCOTCH PUDDING DESSERT
16 ounce pkg cream-filled vanilla sandwich cookies, crushed
1/2 cup butter or margarine, melted
8 ounce pkg cream cheese, softened
1 cup sifted powdered suggar
12 ounce carton Cool Whip, thawed, divided
2 1/2 cups cold 2% milk
2 pkgs (3.4 ounces each) instand butterscotch pudding mix

Set aside 1 cup cookie crumbs for topping. Combine remaining cookie crumbs and melted butter. Press into bottom of a buttered 13 by 9 inch dish. In large bowl, beat cream cheese and powdered sugar until smooth. Fold in 1 1/2 cups Cool Whip. Spread over crust. In another bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 or 3 minutes until set. Spread over cream cheese mixture. Top with remaining Cool whip. Sprinkle with reserved crumbs. Chill several hours until serving time. Makes 15 servings.
