Biscuit baking: A tradition 4-H shares with the fair

There is nothing that can compete with the smell of fresh baked biscuits!
Biscuit baking is a tradition in this region and there are many who will share fond memories of baking biscuits with their family. However, there are many who have never baked biscuits and would like to learn! Every year, 4-H combines education and the nostalgic reminder of baking biscuits with family by setting up a booth at the Tennessee Valley Fair.
Groups of students come in shifts to learn how to make biscuits and pass them out to patrons visiting the fair. It is a hit!
Students learn to work together, talk with visitors, and bake some great biscuits! Served up with butter, jam and apple butter, visitors can have just what they like. Maybe even try something new!
Just like all 4-H activities, we appreciate the help and support of volunteer leaders to make this event possible. Thank you to Pamela Helton and all the 4-H students who participated.

Famous 4-H Biscuits

2 Cups Self-Rising Flour
1/4 Cup Shortening
2/3 Cup Milk
Preheat oven to 400 degrees. Place flour in mixing bowl; add shortening.
With pastry fork, cut shortening into flour till mixture resembles coarse crumbs. Gently push the flour mixture to the edges of the bowl, making a well in the center. Blend in milk with a fork till dough leaves side of bowl. Turn dough onto lightly floured surface. Knead gently 10 to 12 strokes.
On lightly floured surface pat or roll dough to slightly more than 1/2-inch thickness. Cut with a 2-inch biscuit cutter, dipping cutter into flour between cuts.
Transfer cut biscuits to an ungreased baking sheet. Reroll scraps of dough and cut into biscuit shapes. Bake in 400 degree oven for 6 to 8 minutes, or till golden. Makes eight 2-1/2-inch biscuits.
