Beefy stuffed green peppers

BEEFY STUFFED GREEN PEPPERS
4 sweet green bell peppers
1 pound lean ground beef
1 cup minced onion
1/2 cup cooked rice
1 teaspoon salt
1/4 teaspoon black pepper
8 ounce can tomato sauce

Cut each green pepper in half from stem end to the bottom. Discard stem end, membranes and seeds. Cook pepper halves in water to cover for 3 minutes. Drain and rinse in cold water to stop cooking. In a mixing bowl, combine ground beef, onion, cooked rice and seasonings. Spoon into prepared pepper halves. Place on greased 9 by 13 inch baking pan. Bake in preheated 375 F. oven for 35 to 40 minutes or until meat is no longer pink. You can use yellow, orange or red sweet bell peppers as well.
