Barbecued "SPAM"
Ask almost anybody if they like Spam, and they will turn up their nose. Too bad. Spam is a good pork product. It got a bad rap during WWl!. Spam was probably on the menu far too often and probably prepared only one way-plain out of the can. If you receive commodity foods at a food bank, Spam or Treet (same thing) will be given under its generic name of luncheon meat. There are several ways to fix it. I will offer you a couple. These recipe work with cooked ham, too.
SPAM LOAF
1/2 ounce can Spam, diced
1/2 cup shredded sharp Cheddar cheese
1/2 cup chopped green pepper
1/2 cup chopped onion
3/4 cup crushed saltine crackers
1 can cream of mushroom soup, undiluted
1 cup milk
3 eggs, beaten
Pulse Spam in food processor until finely minced. Transfer to mixing bowl. Add green pepper, onion, crushed saltines and mushroom soup. Add beaten eggs and milk. Stir well to combine. Pour into greased loaf pan. Bake at 350 F. for 1 hour or until set. Serve with cheese sauce, if desired.
SPAM AND MAC CASSEROLE
1/2 cup chopped onion
2 tablespoons margarine, melted
1 can cream of celery soup, undiluted
1 cup canned diced tomatoes
1/4 teaspoon dried thyme, crushed
Dash of pepper
1 cup raw elbow macaroni
1/2 ounce can Spam or luncheon meat, diced
1/4 cup minced green pepper
1/4 cup shredded Cheddar cheese
Cook macaroni in water to cover until tender. Drain. In skillet over medium heat, cook onion in margarine until tender, but not browned. Stir in soup, tomatoes, thyme and dash of pepper. Add cooked macaroni, diced Spam and green pepper. Stir and cook until heated through. Spoon into greased 1 1/2 quart casserole. Sprinkle with shredded cheese. Bake, uncovered, at 350 F. for 35 to 40 minutes or until bubbly. 4 servings.
