Banana Muffins
Bananas flavor most any kind of bread. Muffins are no exception. Stir up a batch of these for dessert tonight.
Banana Muffins
1-3/4 cup sifted cake flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1/3 cup sugar
1 egg, well beaten
1/3 cup melted shortening
1 cup mashed ripe bananas
Strawberry jam
Sift together dry ingredients into mixing bowl. In another bowl, mix together egg, shortening and bananas. Add to dry ingredients, mixing only enough to dampen flour. Turn into well-greased muffin tins. Drop about a teaspoon of jam on top of each muffin. Bake at 400° F for about 20 minutes.
