Baked Pork Steak with Rice

This is another easy pork steak recipe. I am a great fan of casseroles. Stir it up and pop it in the oven for an hour or so. I can be busy doing something else while it bakes.
Baked Pork Steak with Rice
6 pork steaks, about 3/4 inch thick
2 tablespoons shortening
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup uncooked rice
3 1/2 cups chicken broth
1/2 cup chopped onion
1/2 teaspoon poultry seasoning
Brown pork steak on both sides in hot shortening in large skillet. Drain steaks, reserving drippings in skillet. Sprinkle steaks on both sides with salt and pepper. Set aside.
Add raw rice to hot pan drippings. Cook over medium heat for 10 minutes until opaque and lightly brown, stirring constantly. Add chicken broth, chopped onion and poultry seasoning to rice. Stir well to blend. Pour rice mixture into well-greased 3-quart casserole. Place browned pork steaks on top of rice mixture.
Cover and bake at 350° F for 1 hour and 20 minutes. Or you can bake it for 1 hour, uncovered, saving 20 minutes of baking time. Makes 6 servings.
