Baked Creamed Beans
No, this is not a soup. It is a delicious baked mess of beans. Yes, sour and cream does get along well with baked beans.
BAKED CREAMED BEANS
2 cups navy or great northern beans
1/2 teaspoon ground ginger
1 large onions, chopped
1/2 cup sour cream
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 tablespoon molasses
1 cup boiling water
1/4 cup brown sugar
Chopped parsley (garnish)
Soak beans overnight in water to cover. Drain and rinse. Cook beans with the ground ginger in enough water to cover until beans are soft. Blend together rest of ingredients except parsley and add to beans. Stir to combine. Pour into baking dish. Bake at 350 F. for 1 hour until bubbly. Remove from oven and sprinkle with chopped parsley. Serve.
