Cool weather is the best time for spice cookies. Something about that time of the year calls for the warming effect of spices. These are easy to make with a box of cake mix.

Applesauce Spice Cookies
18 1/2 ounce box spice cake mix
1/2 cup applesauce
1/2 cup vegetable oil
1 egg
1 cup raisins
Combine everything except the raisins in a large mixing bowl. Mix well. Add raisins. Chill in fridge for 1 hour. Drop from teaspoons onto ungreased baking sheets. Bake in preheated 350 F. oven for 12 to 15 minutes. Makes 60 cookies. Can be frosted with 1 can lemon ready to use frosting. Note: To make Pumpkin Cookies, use yellow cake mix with 1 teaspoon pumpkin pie seasoning in place of spice cake mix.
