Anytimee borsch
I like beets.It seems the fresh ones can only be found in the summertime. No matter, the canned ones are good, too. This recipe calls for canned beets. I will save the fresh ones to where they can star alone. A great soup for a hot summer day.
Anytimee borsch
1 cup sour cream
16 ounce can diced beets, drained and chilled
1/2 inch slice of lemon peel
12 small onion, sliced
1//2 teaspoon salt
1/2 teaspoon sugar
1 cup crushed ice
In blender, add 3/4 cup of sour cream. the drained beets, lemon slice, sliced onion, salt and sugar. Cover and blend at high speed for about 15 seconds. Scrape down sides of container. Add ice. Cover and blend about 10 seconds longer until smooth. Serve immediately, topped with dollops of remaining sour cream. 4 servings.
