My Biscuits

I wrote a story about Jackie making my biscuit recipe. I have the recipe cited on page 54 in the Revival Vision Cook Book. If you don't have the cook book, that is not enough information to make my biscuits. So here we go.

MY BISCUITS
4 cups self-rising flour
3 tablespoons baking powder
2 tablespoons sugar
1/2 cup shortening or lard
2 cups buttermilk
1/2 cup butter or good margarine

In a large mixing bowl, combine self-rising flour, baking powder and sugar. Fluff up the flour in the canister before measuring to get an accurate measurement. Cut in shortening with your fingers until like coarse meal. Pour in the buttermilk with a large kitchen spoon. Be sure to incorporate all the dry ingredients. Turn ball of dough out onto a bed of flour. Let it rest a few minutes to firm up. Then knead like you would bread dough for 15 to 20 times. Let rest a few minutes while you lightly spray a baking sheet with butter spray. Roll out biscuits to about one inch thickness. Cut with floured biscuit cutter and place on prepared pan, You should have about 15 biscuits. Bake in preheated 450 F. for 10 minutes. Meanwhile nuke butter in microwave until melted. Remove biscuits from oven. Brush tops with melted butter. Return biscuits to oven for 1 minute. Great biscuits. Makes 15.
Note: The recipe can be easily cut in half.
