Molded Horseradish Relish
Not all relishes need to be of a sauce type. A shimmering mound of lemon flavored Jello goes well with ham or roast pork. You can make it the night before and allow it to smooze in the fridge until ready to serve. Let's face it, anything you can make ahead is a plus.
MOLDED HORSERADISH RELISH
3 ounce package lemon Jello
1 cup boiling water
2 tablespoons vinegar or lemon juice
1/4 teaspoon salt
3/4 cup prepared horseradish, drained
1 cup cream, whipped
Mix together the Jello, vinegar and salt. Let cool. When it begins to thicken and is syrupy, fold in the whipped cream and horseradish. Pour into a mold or serving bowl and chill until firm. If chilled in a mold, serve on a bed of lettuce.
