Homemade Hashbrowns

Let's say you want hashbrowns for supper, but there aren't any in the freezer. With no time to go to the store, you will have to grate your own potatoes if that is what you'll have for supper. Try this recipe.

HOMEMADE HASHBROWNS
8 small potatoes, peeled, finely grated
2 eggs
1/4 cup flour
Salt and pepper
1/4 cup oil

In medium bowl, mix with fork the grated potatoes, egg and flour, adding salt and pepper to taste. Heat oil in heavy bottomed skillet over medium heat. Form potato mixture into 4 patties and add to skillet. Reduce heat to low. Cover and cook until bottoms are golden brown. Flip patties. Add more oil if necessary. Cover again and cook until golden brown. Serves 4.
