Chicken Parmesan Pasta Casserole
This casserole goes together quickly, since we are using frozen breaded chicken patties diced into bite sized pieces. Just toss it together and bake until bubbly, about 45 minutes.
When you need a great casserole in a hurry, this is it.
Chicken Parmesan Pasta Casserole
8 ounces rotini pasta
8 frozen breaded chicken patties, thawed and diced
24 ounce jar marinara sauce
8 ounce can tomato sauce
2 cups shredded mozzarella cheese (8 ounces)
1/2 cup grated Parmesan cheese (2 ounces)
2 tablespoons dry red wine (optional)
Cook pasta as directed, drain. In large bowl, stir together pasta, marinara sauce, tomato sauce, half the mozzarella, half the Parmesan and red wine (if using). Gently fold diced chicken into pasta mixture. Pour into a buttered 8-inch square baking dish. Top with remaining mozzarella and Parmesan cheeses. Bake until hot and bubbly for 35 to 40 minutes. Let stand 5 minutes before serving
Note: This would be good with an Alfredo sauce as well.
