Bean Meatloaf
Yes, beans do get along with ground beef. They extend the ground beef in a meat loaf. The flavor is good, too. A drained one pound can of great northern beans can be used in place of just boiling up the necessary beans.
BEAN MEAT LOAF
1 1/2 pounds ground beef
2 cups cooked beans
1 small onion, chopped
1/2 cup chopped green pepper
36 saltine crackers
1 can tomato soup
1 egg
Salt and pepper to taste
2 slices raw bacon
In large bowl combine all ingredients. Turn into a greased loaf pan and cover with bacon slices. Bake at 350 F. for 45 minutes. Allow loaf to rest for 15 minutes before slicing.
