Ham Salad Sandwiches

I'm in trouble right out of the gate. There is no ham in my Ham Salad Sandwich Spread. Nope. Just good old bologna. It sounds better than saying, "Bologney Sandwich. That means something else to me. I remember taking sliced bologney sandwiches to work. They would be warm by lunch time. Yuck! Those weren't happy memories.
I remember back in the 1950s when I first learned to make this delicacy. I say delicacy because I still see it as such. With a pound of bologna, you can grind up enough sandwich filling to feed a bunch of folks. Add a leaf lettuce, if it is the right time of the year and you have a garden. That's a picture perfect creation.
A while back, I fixed a pile of Ham Salad Sandwiches for something we did at our church, Revival Vision Church of God. Boy, oh, Boy! Did I get a reaction. All the grey-haired parishioners remembered Ham Salad Sandwiches. Those who fondly remembered them helped themselves to my beautiful sandwiches. The rest passed them by. Isn't that the way it is with memories? Some are good and some are the other kind. Let's remember the good ones, like Ham Salad Sandwiches.
HAM SALAD SANDWICHES
1 pound bologna
1 medium dill pickle, diced
1/2 cup raw diced onion
About 1 cup salad dressing
Velveeta cheese slices, optional
Lettuce leaves, optional
In years past, I used a food grinder. Today, it's the food processor. That's progress. Chunk, chub, ring or slice, any bologna works in this recipe. A cheaper brand will do. No one will know, except you. Remove rind from bologna and cut into chunks. I do it in two batches. First, I add half the bologna and the pickle. Process to desired consistency. Remove to large bowl. Add the rest of the bologna and the onion. Process that. Combine the two batches. Stir in salad dressing. You judge how much. Eureka! Ham Salad! Do you like cheese? Add a slice plus the lettuce leaf. Cut on the diagonal, round up some chips and a glass of sweet tea. You are doing lunch.
