Waldorf Salad Plus
Apple picking time will soon be here. There are so many things you can do with apples, from cider to apple pie. Waldorf Salad is an old timey fruit salad. The traditional one had apples, walnuts and celery. This is not a traditional recipe. Back in the day, we didn't buy seedless table grapes or canned pineapple on our limited grocery budget. What a difference seventy years make. Back then it was hard to come up with variety in our diet. Now, Food City carries just about everything and we can afford to make this salad. This is another one we made at our Wednesday night church suppers. Try it.
WALDORF SALAD PLUS
2 cups crushed or chunk pineapple, drained. Reserve juice
1/2 cup chopped celery
4 diced apples, peeled, cored, diced
1/2 cup chopped walnuts or pecans
2 cups seedless table grapes
DRESSING:
1 cup reserved pineapple juice
2/3 cup sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1 beaten egg
Combine pineapple, celery, apple and grapes in a salad bowl. Bring 1 cup reserved pineapple juice to a boil over medium heat. Stir together sugar and cornstarch in small bowl. Combine with juice in saucepan. Cook thoroughly over low heat until thickened. Cool and pour over salad. Blend well. Chill until serving time.
Note: For a more colorful salad, leave peel on half of the diced apples or add a few sliced maraschino cherries.
