Philippino Egg Rolls with Sweet Sour Sauce

This recipe is from Lita, Jamie Porter's Filipino wife. They came to Tennessee to visit us a year ago. Lita made these for us. I wanted to chop the veggies in my food processor. She was horrified. They must be chopped by hand, she told me. Sorry, Lita. It's the food processor for me.

You can find the egg roll wrappers in the frozen food section of the grocery store. Or you can go to West Knoxville to an Asian store and buy the fresh ones. They are in a package, too, so I don't see any difference except taking more gas for the car to buy them from an exotic Asian store.

Use 85% or 90% ground beef to cut down on unwanted grease to drain. If you use the food processor and do a two person operation, it won't take all day to prepare. The extra egg rolls can be frozen for use another time. So while you're at it, make a lot of them.

PHILIPPINO EGG ROLLS
1 lb ground beef
1 medium head of broccoli, finely chopped
3 carrots, shredded
1 medium onion, finely minced
Soy sauce to taste
2 packages egg roll wrappers
Oil for frying

Crumble and brown ground beef and onions in skillet. Add carrots, broccoli and soy sauce. Simmer 10 to 15 minutes. Drain mixture in colander. Stir to make sure all liquid is drained out. That takes about 15 minutes. You are now ready to prepare the egg rolls. Get your table set up for the operation. Place container of ground beef mixture in center of table. Each person doing the wrapping needs a small bowl of water nearby. Open a package of wrappers. Cover remainder with wet towel to prevent them from drying out. Select one wrapper. Place a spoonful of filling in upper center of wrapper. Fold top corner over filling, fold side corners in, then roll up jellyroll fashion. Moisten last edge with water to seal. Do not fry immediately. Allow the water seal to set. Put 3 tablespoons oil in large skillet. Fry no more than 6 at a time. Be sure all sides are fried. Drain on paper towel. Eat immediately with Sweet & Sour Sauce.

SWEET & SOUR SAUCE
4 tablespoons ketchup
4 tablespoons white sugar
4 tablespoons vinegar
1 tablespoon cornstarch mixed in a little water
Dash of chili powder

Bring entire mixture to a boil in small saucepan over medium heat. Cool before serving.
