Meatless Tostadas

Here is a good meatless Mexican recipe to try. Beans were used instead of ground beef. Anyway, it is tasty.

MEATLESS TOSTADAS
2 cups dry navy beans
1/4 teaspoon ground ginger
1/3 cup bacon drippings
1/2 cup minced onion
1 minced garlic clove
2 teaspoons salt
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 package corn tortillas

Soak beans overnight. The next morning, add ginger and bring to a boil in soaking water. Cook over low heat for 2 hours or until skins pop. When beans are tender, there should be so little water that it seemed to have been all absorbed. Gently mash beans with potato masher so about half the beans are mashed. Heat drippings in large skillet. Add onion and cook 5 to 10 minutes until cooked but not browned. Add mashed beans and remaining ingredients, except tortillas. Heat, stirring, another 5 minutes until thoroughly hot. Mixture will be almost dry. Taste for seasoning. In heavy skillet, heat about 1/2 inch of oil. Fry tortillas, one at a time, turning to brown sides lightly. Drain on paper towels and keep warm in 250 F. oven until all tortillas are fried. To serve, place a hot tortilla on plate and spoon some of the refried beans on half. Sprinkle with some shredded lettuce and shredded sharp cheddar cheese. Fold tortilla over filling and eat out of hand like a hamburger. If desired, serve with chilled salsa. Makes about 15 tostadas.
