Marinated Vegetable Salad

New Years 2019 is here ready to start us on another year long adventure. Black eyed peas are supposed to bring good luck. Maybe so, but they taste good anyway. Here is an easy recipe to make. You probably already have the ingredients in your pantry. No need to trudge out to Food City. Let's get marinating!
MARINATED VEGETABLE SALAD
3/4 cup white vinegar
1 cup sugar
1/3 cup olive oil
1 teaspoon each of salt and pepper
1/2 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped onion
15-oz can French cut green beans, drained
15-oz can green peas, drained
15-oz can black-eyed peas, drained
15-oz can whole kernel corn, drained
1 small jar chopped pimientos, drained
Place vinegar, sugar, oil, salt and pepper in small saucepan over medium heat. Bring just to a boil. Stir and set aside to cool. In large bowl, combine all veggies. Pour cooled sauce over all. Gently stir to well combine. Refrigerate at least 4 hours or overnight for flavors to smooze. Drain off some of sauce before serving. This salad will keep several days. This is a good wintertime salad. Happy New Year!
