Ham Loaf

Are you having ham for Christmas dinner? In our house, that feast is too close to Thanksgiving Day to have turkey again. We only like so much. A couple days of second-day turkey dishes and we are over it.

Anyway, turkey is a lot of work to prepare. There are a lot of ham recipes that don't take much time. With so many things to do on Christmas Day, roasting a turkey is not on my agenda. Opening presents is number one on my mind for Christmas morning.

As with the turkey, you probably will have leftovers. Don't send it home with your visiting family. Make this recipe instead. It is different. I bet you never thought of pairing graham crackers with ham, but it works. Try it.

HAM LOAF WITH GRAHAM CRACKERS with SAUCE
2 lbs cooked smoked ham, ground
1 lb fresh pork, ground
1/2 lb graham crackers, crushed
1 cup milk
1/2 teaspoon Worcestershire sauce
1 egg, lightly beaten

I grind my ham and lean loin chops in my food processor. You can do it in an old fashioned meat grinder as well. In large bowl, mix all ingredients until well blended. Place in well greased loaf pan. Bake at 350 F. for 40 minutes or until set. Excellent served hot or cold.

SAUCE:
1/2 cup brown sugar
1 teaspoon dry mustard
1/4 cup vinegar
1/4 cup water

Combine all ingredients. Heat until sugar dissolves. Use to baste the ham loaf as it bakes.
