Fresh tomatoes in the summertime are a treat. The winter hothouse ones are pretty but lack flavor. This is a summertime salad
Fresh Tomato Salad
5 red tomatoes, cut into chunks
1 medium sweet onion, cut into rings
2 green peppers cut into large dice
4 ounces (1 cup) diced Mozzarella cheese
2 tablespoons cider vinegar
1/3 cup vegetable oil
3/4 teaspoons dried oregano
3/4 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon black pepper
lettuce leaves
Place prepared vegetables in large bowl. Combine dressing ingredients and mix well. Pour over vegetables and lightly toss. Refrigerate at least 4 hours to allow flavors to blend. Serve on lettuce leaves.
