Chicken Chow Mein

I like Chicken Chow Mein. It is a quick easy meal. I remember when I worked back in the late 70s with four kids at home and a hungry husband. I worked in a sewing factory. Sewing doesn't require much thinking capacity. Once you learn what the operations require, it was pretty much rote. I would plan my supper meal as I sewed.

I also remember that when I walked through the door, my husband would ask, “What's for supper?” I usually had something planned to make. He would always offer to peel the potatoes. He thought potatoes should go with every meal, even Macaroni and cheese. No potatoes are needed for this dish.

CHICKEN CHOW MEIN
1 cup chopped onion
1 cup chopped celery
14 ounce can chicken broth
12 ounce can chicken breast, diced
2 cans cream of mushroom soup
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped pimiento
1 pkg frozen peas
Two cans of chow mein noodles

Simmer onion and celery in chicken broth until tender. Add mushroom soup, diced chicken, salt, pepper and pimiento. Cook slowly for 20 minutes. Add frozen peas. Cook until peas are tender. Serve over chow mein noodles. If I didn't have any chow mein noodles, I would serve it over biscuits. Serves 6 generously.
