Caramel Walnut Thumbprint Cookies
I like caramel. It seems there isn't much I don't like. I remember when I wore a size 10 dress. That was so very long ago. This recipe will help throw you into those half sizes I now know so well. It is delicious. Try it anyway.
CARAMEL WALNUT THUMBPRINT COOKIES
4 cups plain flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups brown sugar, divided
1 cup butter, softened
2 eggs
2 teaspoon vanilla
1/2 cup sour cream
1 cup finely chopped walnuts
Mix flour, baking soda and salt together in a medium mixing bowl. Set aside. Combine 1 1/2 cups of the brown sugar and butter in medium mixer bowl. Beat at high speed until light and fluffy. Add eggs and vanilla. Beat until blended. Add flour mixture and mix well. Chill for 1 hour. Shape dough. Shape into 1 inch balls. Arrange 2 inches apart on ungreased baking sheet. Make an indentation in center of each ball with your thumb. Now combine remaining 1 cup brown sugar and sour cream in medium mixer bowl and mix well. Stir in chopped walnuts. Spoon a teaspoon of mixture into each indentation. Bake for 12 minutes or until edges are firm to the touch and golden brown. Cool on baking sheet for 2 minutes. Remove to wire rack to cool completely.
