Baked Fillets and Onions
You wouldn't expect onions to go so well with fish, but it does. Just don't use the onions raw. Fried in butter or margarine until golden brings out a delicate flavor that complements the fish. Of course, a little bacon is always welcome.
BAKED FILLETS AND ONIONS
2 medium onions
4 tablespoons margarine
2 tablespoons vegetable oil
4 fish fillets, any kind
Salt and pepper
1/2 cup buttered bread crumbs
Crumbled fried bacon for garnish
Chopped fresh parsley for garnish
Peel and slice onions very thin. Saute in skillet over medium heat in margarine until just transparent. Stir occasionally. Salt and pepper to taste. Arrange fillets in oiled shallow baking pan or casserole. Cover with the sauteed onions. Sprinkle with buttered bread crumbs. Bake at 400 F. for 12 to 15 minutes or until fish flakes easily with a fork. Sprinkle with bacon and chopped parsley, if desired. Makes 4 servings. Serve at once.
